Chanterelle Sauce with Bacon Bread Dumplings :)

So as I already mentioned in my last post, it’s mushroomtime !!!! 🙂 So here we go! 

Almost the same dumpling recipe like in the pork loin post, except with BACON!!! 🙂
Bacon Bread Dumplings:
250g dry bread cubes
60g butter
60g chopped onions
Bacon cubes
200ml milk
3 eggs
2 spoons of chopped parsley
40g flour

Heat the butter, add onions, bacon cubes and parsley. Add that mixture to the bread cubes. Mix eggs, milk and salt. Put milk egg mixture in the bread cube mixture and mix it up really good. Let it rest for 10 minutes. Add flour mix.

Wet your hands and shape dumplings. Cook them for about 12-15 minutes. 

For the chanterelle sauce you’ll need:

500-800g of chanterelles
200g sour cream
60g cream
a hand full of parsley
150g beef soup
(made out of a bouillon cube is fine )
1-2 chopped onions

juice of 1/2 lemon 

Heat butter, add parsley onions, brown a bit then add the chanterelles, after a couple of minutes add sour cream, cream, salt, pepper and beef soup. Cook for another 15 min and in the end add lemon juice. 

Another tip: If you can choose the chanterelle go for the small ones ! Taste better in my opinion 😉
