Homemade Pork Scratching

Do you know the situation, when there is a succulent pork roast, with the perfect crunchy crust, but just not enough of that and you want more! In my family we usually fight over the crust, so I just had to make some extra. In Austria pork scratching aka crackling is not very common but in England it is a well known bar snack. Thank god there is Tom who always inspires me to look into the english kitchen, so this is basically pork crack!

Ingredients:
Pork Skin
Olive Oil
Sea salt

Brush pork skin with olive oil on both sides and salt. Bake about 40 minutes in oven at 200°C until crispy. Then just break and snack!
