My family has also decided to eat low carb with me a little and to celebrate that I made an awesome juicy low carb almond cake / loaf with mascarpone cream. The cake is quite simple and made without flour, butter or oil. The almonds actually do all the work for. What makes life even easier for me now is Xucker! How to do it:
Preheat the oven to 175 ° C. Separate eggs and beat the egg whites with a pinch of salt. Mix the egg yolk, vanilla, orange zest, lemon zest and Xucker until creamy and stir in the almonds orange juice. Then fold in beaten eggwhites to the mass. Fill in a baking form of your choice and bake for 80-90 minutes. Possibly cover with aluminium foil if it becomes too dark. Before the end of baking check with a knife whether the cake is already finished, since it can also be done a bit earlier.

The Topping is super simple.Just mix all the ingredients together and spread on the cooled loaf / cake. If you have any leftovers, just serve it with the cake.
