I apologize for not posting anything lately, so for tonight I m gonna post two delicious dishes :).
The first recipe is super simple but really tasty and healthy as well 🙂
Tomato Soup with Basil
1kg peeled Tomatoes
1 bundle of basil
2 or 3 cloves of garlic
Chili powder if you like it spicy 🙂
and Salt n Pepper of course !
First of all you have to brown the chopped onion and the garlic in olive oil, then just add the peeled tomatoes (Tip: cook the tomatoes for like a minute, it makes it a lot easier to peel the skin). Add Salt,pepper and chilli,let it cook for a while and then purée the soup. After that add the fresh basil and le t it cook for another 10 minutes. Voila that simple! You can serve the soup with bread or something… whatever zou feel like 😉

Turkey breast – Avocado Ciabatta
My favourite dish right at the time ! Finally got to take photos and post it 🙂
Turkey or Chicken Breasts
any kind of cream cheese (I prefer the one with herbs)
dry thyme and basil
Put the all the herbs on the turkey breast and roast the turkey gently. I prefer to squash the avocado and spread it on the ciabatta top part (its easier to eat that way, but you can cut the avocado in slices as well). Cut the tomatos into slices and spread the cream cheese on your bread.

So as you can probably tell by now, it doesn’t have to be super complicated or time-consuming. Cooking can be simple and delicious at the same time! 🙂
