Ingredients for the dough (Mürbteig):
66g powdered sugar
1 egg yolk
Skin of 1 lemon shredded through cheese grater ( ONLY THE YELLOW PART ! )
just a little salt
and vanilla sugar
|1. Put all the ingredients together and start kneading the dough until it looks like this:
Let it rest for 30 minutes.
|2. Roll out the dough until it fits in your baking form.
|3.put holes into the dough with a fork so there wont be any bubbles. Put in the oven at 190˚C for about 20-25 minutes.
For the lemon cream:
Juice and Skin(again only yellow part through cheese grater) of 1 lemon
3 egg yolks
Heat the milk add all the ingredients, so it s gonna be a yellow sticky cream. When you re done with that you’ll need :
6 big spoons of water
4 egg whites
Beat the eggwhite until its stiff, heat sugar and water so you’ll have sugar syrup and add that to the eggwhites, continue beating. Add half of it to the lemon cream. The other half you’ll need to put on top of the tarte kind of like I did in the picture to you, but the exact way is up to you ;). Spread the lemon cream on the dought that should now be gold brown and then put the eggwhite mass on top, put some more powederd sugar on top and then another oven run at about 220 ˚C. Watch constantly It tends to burn really fast! When its light brown on top take it out immediately. VOILA DONE ! 🙂
