So I have discovered something I looove right now : QUINOA ! So good and healthy 🙂 One very yummy and easy recipe with ingredients everyone can get everywhere! 🙂
2 chopped tomatoes
1/2 chopped zuchini
1 chopped onion
1 spoon of curry
1 spoon of white balsamic vinegar
juice of 1/2 lemon
hand full of fresh basil
coconut butter or olive oil
Before you cook Quinoa you have to rinse it in warm water, after that let it cook in water for about 20 minutes.
First brown onions in coconut butter add zuchini, paprika and after a view minutes tomatoes and basil. Then add curry powder and balsamic vinegar. Let it cook for another 5min and in the end add the juice of the lemon 🙂
