Here’s the recipe to the strawberry cupcakes you might have tasted at Nascherei Peer Kusiv live . Here we go !
Ingredients for about 10 cupcakes:
100g fine sugar
100g soft butter
1 teaspoon lemon zest
1/2 teaspoon vanilla extract
1 teaspoon baking powder
(this is for a lot of cream! We love cupcake toppings!)
360 ml cream
600g cream cheese
130g powdered sugar
4 mid size strawberries (chopped really really really small)
Okay so for the dough mix cream cheese, butter, sugar, eggs and vanilla extract with an electric mixer (about 2-3 min), then add flour, lemon zest and baking powder slowly and mix on lowest speed until there are no clumps anymore. Put in the preheated oven at 180˚C for 15min to maximum 20 minutes you don’t want to leave it in too long or its not that juicy anymore.
Cream: Mix cream cheese and powdered sugar at lowest speed for about 15 seconds then add cream and mix for another minute or 2, so the mass gets a bit stiffer, than mix in chopped strwaberries carefully with a spoon.
Take cupcakes out of the oven, let them cool down and put cream on top with a forcing bag.
There are two different toppings below cause the left ones have the mascarpone topping from the rose strwaberry cupcakes 🙂
