Rasberry Cheesecake Cupcakes

What do you need ?


100g shortbread cookie
50g soft butter

60g Sugar
1 Table Spoon of vanilla custard powder
350 g cream cheese
1-2 tea spoon lemon zest 
60g sour cream 
2 eggs

300g frozen rasberries
sugar –> amount is up to you 
and a couple of fresh rasberries to decorate your cupcakes ! 

Start with cooking the rasberries then put through a sieve and put them aside. 
Add some sugar if you don’t want it to be too sour 🙂

So for the base you’ll need the shortbread cookies, put them in a bag like in the picture and take any kind of hammering device you can find and start hammering 😉 


until it looks like this ! 


Mix the cookie crumbles with melted butter and then put in the cupcake forms ( each about one table spoon) After press until its kind of hard. I did that with a tea filter kind of thingy.

Mix sugar, vanilla custard powder, lemon zest and sour cream together with an electric mixer. Add eggs too. And in the end slowly mix a little bit of the rasberry juice that you got before into the cheese mass. 

Put in the preheated oven for 20 min at 190˚ C.

To decorate them put some gelatine in the rest of your rasberry juice and put a splash of it on each cupcake. Then add the fresh rasberries 🙂 !
