Pork loin with crust, dumplings and cabbage salad

I made the most delicious pork loin ever ! The crust was sooo crunchy and delicious, to die for !!! We were honestly sitting on the table moaning because it was that great ^_^

This is how it works 😉 It takes about 2 hours with preperations 🙂

When you go to the butcher to get your meat, you should ask him to seperate the bones from the loin (keep the bones for sauce!) And ask him to cut the skin of the pork every 5 mm.

Ingredients:

2kg-3kg Loin of Pork
1 small spoon of chopped rosemary
4 bay leaves
2 spoons olive oil
8 spoons Balsamic vinegar
1/2 spoon of fennel seeds
5 cloves of Garlic
1 chopped carrot
5 chopped celery stalks
1 chopped onion
1 small spoon of caraway
sea salt

First of all you rub the crust with some of the rosemary and the caraway, then you put the rest of the rosemary the garlic and the fennel seeds on the meat part (try not to put any of that mixture on the crust or else it will burn the crust). Let it rest for half an hour on a tray and add balsamic, olive oil and bay leaves. After put a lot of sea salt on the skin so it will get extra crunchy!

Preheat the oven (about 275 degrees C), put the meat on an oven grid and put it on the highest level in your oven. Brown the onions and add them with carrots and sellery to the tray with the balsamic sauce and the bones that you let the buthcher cut out. put that tray right underneath the pork loin. After 20 minutes turn down the heat to about 220 degrees. The pork should be in the oven for about 60-90 minutes. When its done take it out and let it rest for about 10 minutes. On the tray that you put underneath is the sauce :)Voila 🙂 It should look like this :

For the salad you ll need:

White cabbage
Salt
Sugar
Hesperiden Vinegar/ apple vinegar
Any neutral vegetable oil
Caraway
(the amount is up to you, in my opinion every person has a different taste when it comes to salads)

Pretty simple 😉

Cut cabbage into very thin slices salt mix with your hands and let it rest for an hour. Mix vinegar and caraway cook it up then add to cabbage. After add oil and sugar mix and its done 🙂

DUMPLINGS:

250g dry bread cubes
60g butter
60g chopped onions
Salt
200ml milk
3 eggs
2 spoons of chopped parsley
Salt
40g flour
Heat the butter, add onions and parsley. Add that mixture to the bread cubes. Mix eggs, mil and salt. Put milk egg mixture in the bread cube mixture and mix it up really good. Let it rest for 10 minutes.

Wet your hands and shape dumplings. Cook them for about 12-15 minutes.
