There were a view ingredients leftover from my last recipe asian fusion spring rolls so I have decided to not do my regular salmon recipe, but to make one for my blog and change it up a little bit. I have just participated in a challenge for Merkur and because of that I have learned to use up all my ingredients and not waste any good food.
Ingredients for 2 people:
1 larger salmon fillet without skin
1/2 roll of puff pastry
2 handfuls of baby spinach
100g feta (half a pack)
1 handful of oyster mushrooms
Olive oil, salt, pepper
1 beaten egg
lemon and spinach as a garnish
Heat olive oil in a pan and fry spinach, oyster mushrooms and feta.Place half of the spinach mixture on the puff pastry then place the salmon on it, add salt and pepper and cover with the remaining mixture. Fold the puff pastry and when you feel like it decorate it ;). Brush with beaten egg and bake in the oven at 190 ° C for about 25 minutes. Cut salmon pocket in half and place on a bed of spinach and lemon slices.
