It’s very Mexican … but it’s not!

Today we are going into the next round of our weekly food video post! Today we are cooking something very mexican … but then its not really mexican. A delicious one pot meal that is not even that unhealthy!




1 onion
1 garlic clove
250g Quinoa (here Neni Quinoa Trio that i got at the Neni Event :))
400g minced beef
1 can red beans
1 can corn
1 Taco Mix
1 can Salsa (hot)
some cherry tomatoes
1 lemon or lime
2 avocados
salad hearts
salt, pepper
1 glas water (about 250ml)
Cheeeeese up to your taste!
Taco Shells
olive oil

Put olive oil in hot pan. Brown chopped onions, garlic and minced beef. Add beans, corn, washed quinoa, salsa, taco mix, some chopped cherry tomatoes, juice f half a lemon, salt, pepper and water. Cook covered for 20 minutes on small fire. Then fill it in oven proof dish and spread cheese on it. Bake at 200°C for about 10 minutes to get cheese fully melted. Squash avocados add some more chopped tomatoes, rest of the lemon juice, salt, pepper and mix. Then fill up the taco shells and salad with it ! Voila perfect almost mexican dinner!
