After I went to yesterdays JOYA event and learned some awesome vegan recipes from Marie-Louise Schweitzer I got inspired by it and cooked my own vegan quinoa bowl today for lunch. A light summer recipe in which you will not miss out vitamins!
Ingredients for 1 serving :
1 bowl Quinoa
1 handful of young pea pods
2 stalks spring onion
1-2 tablespoon ajvar
3 pieces of chopped dried mango
1 teaspoon chili paste
juice of 1/2 Citron
1/2 diced avocado
Salt pepper
Wash quinoa and cook with 2 bowls of water for 5 minutes take from the heat and leave for another 15 minutes. Meanwhile, cut spring onion and saute with pea pods in olive oil . Add Quinoa and the remaining ingredients, mix and season.
Simple, fast and healthy. Enjoy!
