These cupcakes I made for my dear friend Lilas birthday! Again congratulations I love you! <3
Ingredients for 8 Cupcakes:
100g soft butter
100g cream cheese
100g fine sugar
2 eggs
1/2 teaspoon vanilla extract
150g flour
1 teaspoon baking powder
Strawberries:
200g strawberries
3-4 tablespoons powdered sugar
2 tablespoons rose syrup
Mascarpone topping:
400g mascarpone
4 tablespoons powdered sugar
4 teaspoons vanilla extract
4 tablespoons creme fraiche
1. Preheat your oven to 180˚C, mix butter, creamcheese, sugar, eggs and vanilla extract with an electric mixer, add flour mixed with baking powder. The spread evenly in the cupcake forms. Bake for 15-20 minutes.

2. Cut Strawberries like in the picture below add rose syrup and powdered sugar. Mix it carefully so the strawberries wont sqish. Then put aside for 30 min.
3. Mix all the ingredients for the mascarpone topping, don’t use an electric mixer. The spread on the already cooled down cupcakes.
4. Put one strawberry on top and some of the juice/syrup on it.
