1 Lemon (zest and juice)
150g Soft Butter
1 tea spoon Baking Powder
3 Egg Whites
90 g Powdered Sugar
1.Mix lemon zest, half the sugar, egg yolks, flour and baking powder with an electric mixer for a couple of minutes. Then beat eggwhites with rest of the sugar till stiff and fold into the dough.
2.Then put dough into the cups evenly.
3.Put in the oven at 190˚C for 20-25 minutes max. Take them out and brush the top with a bit of the lemon juice.
4.Now for the topping, you’ll just need to beat egg whites with the sugar till stiff then put that on the cupcakes! Put thm in the oven for 3-6 minutes at 220 ˚C to get the top brown 🙂 DOOOOOONE
